How is a Prosciutto Crudo Toscano PDO made?
Prosciutto Toscano PDO is made from pork legs, which are chilled and then trimmed with an arch cut that leaves a fleshy frame such that, when the curing process is complete, no more than 8 cm protrudes from the head of the femur.
The salting process takes place dry, putting the ham in contact with salt, which is gradually absorbed.
In the sugnatura or greasing stage, the whole ham is covered with a mixture of spices, seasonings, lard and wheat and rice flour.
Boning a whole ham is not only about removing the bone, but also about being able to respect the cured meat by trying to minimise the waste, making it beautiful and inviting to the eye.
The result is hams with a weight ranging from 7.5kg to 8.5kg.

The history of Prosciutto Toscano PDO has very ancient origins; it was in fact the Etruscans who introduced this foodstuff.
In those days, special rules already applied for processing pigs. But it was only under the Medici family, in the 15th century, that real regulation of every stage in the processing of raw ham took place, stages that are still applied today.
