Lardo di Colonnata PGI

The upper part of Lardo di Colonnata PGI is covered with the salt used during seasoning and a mix of spices and herbs.

This gives this particular Tuscan lard a soft texture and a pungent fragrance.

Lardo di Colonnata is aged from a minimum of 6 months to a maximum of about 3 years, during which it is placed in special marble vats, which allow the sausage to maintain the right temperature and perfectly absorb the various aromas.

A true excellence among Tuscan cured meats, which has been abundantly consumed in the lives of marble quarrymen in this production area since Roman times, precisely because of its high caloric content and low cost.

In 2004, the PGI product category included and spread this product all over the world precisely because of its uniqueness.

Legend has it that Michelangelo used to go to Colonnata to personally choose the marble blocks and took the opportunity to taste this Tuscan cured meat.

Lardo di Colonnata must only be obtained from pigs that are strictly of Italian origin and located on strictly controlled farms in Tuscany and other regions such as Emilia-Romagna, Marche and Lazio.

The thickness must be no less than 3 centimetres, with the meat being cut from the back fat layer down to the belly fat.

The careful selection of the best pigs and the perfect conditions under which they are cured are the real secrets for obtaining top-quality Lardo di Colonnata.

The lard is made without using any additives or preservatives, from May to September, respecting natural cycles and favourable temperatures.

How to cook Lardo di Colonnata PGI

To best appreciate the intense flavour of this Tuscan cured meat, we recommend eating it au naturel, trying to cut slices as thin as possible and accompanying it with a slice of warm, lightly toasted Tuscan bread.

But if you prefer to accompany it with a first course, we recommend pan-frying it with cherry tomatoes and fresh chilli pepper.

Once the pasta has been drained, toss it with a little cooking water in the pan and serve.
