Mortadella di Prato PGI is a typical Tuscan cured meat that is produced in the entire area of the municipality of Prato and the municipalities of Agliana, Quarrata and Montale in the province of Pistoia.
It is one of the few Tuscan artisan cured meats to be covered by the PGI specification and also a Slow Food Protected food
The first documents attesting to the birth of ‘Mortadella di Prato ‘ as a product originating in the city of Prato date back to 1733.
Sister Caterina de’ Ricci was beatified and the nuns of the Dominican monasteries in Prato prepared a lunch for the guests present which featured this typical Tuscan sausage.
It is a typical Tuscan cured meat made from a selection of pork meats permitted by the PGI specification and the Slow Food protection, i.e. shoulder, lard, capocollo, guanciale and pancetta.
The production of Mortadella di Prato PGI
The selected parts are processed and left to rest in refrigerated rooms for 24 hours.
The lean parts are then combined with lard, salt, garlic, pepper, spices and finally alchermes liqueur is added.
The distinct spiciness makes the mortadella very tasty and fragrant.
Once the mortadella is stuffed into natural casings, the stufatura (slow ripening) phase continues, where it is hung at a gradually decreasing temperature for 1-3 days.
Finally, there is the baking stage, which is carried out in a steam oven.
Immediately afterwards, the product is rinsed, cooled in special cold rooms for 24-48 hours and dried before packaging.
The modern recipe for Mortadella di Prato was then revised, trying to bring it closer to today’s taste.
It has been lightened with spices and aromas to obtain a delicate product, while maintaining those aromas and flavours typical of Tuscan tradition and using top quality meat.

Mortadella di Prato PGI is eaten with fig jam and good home-made Tuscan bread.
In local cuisine it is used as an ingredient in many typical dishes including ‘sedani alla pratese’ pasta dish.
