Pecorino is a cheese made with sheep’s milk, which differs from the cow’s milk mainly for the percentage of fat and casein.
It is the most famous sheep’s cheese in Tuscany, protected by a PDO and offered in two types: soft (at least 20 days) and aged (over 4 months). The most famous Tuscan productions are those of Cortona, Barga, Pietrasanta, Maremma, Casentino, Valdichiana, Chianti, Crete Senesi.
